Ravinous brought up the fact that only the elite have Middle and Sprint championships, and if this is a sport for all why doesn't everyone do them. (possibly 14s and up as other courses are so short anyway).
I know veterans that have said that they "cant sprint" or "it's not a middle race for us". So obviously, there would have their own courses of suitable length.

what's this then
Junior title and senior/vet titles.
Can't really have any more classes becasue there probably wouldn't be enough competitors
I guess there will also be prizes for other clases at the middle champs.
but in response to the title question - yes we should have them

wouldn't the point be to increase the profile of these races so as to attrack way more competitors.

Yes indeed, last year everyone ran the same course (it was about 7km for men, a bit less for women), but there was still prizes awarded for various junior/veteran categories - there's a picture of Mike Murray winning his 100th title on the Slow website at that event. But with everyone running the same course, Mike probably ran further to win his British Middle title than he did to win the Long distance one!
This year's British Middle event on Saturday there are separate length courses, shorter ones for juniors/vets etc, which presumably all have their own trophies/prizes.
