Giant's causeway maybe overrated, but if it's columnar basalt you're after go to Fingal's Cave - brill!
Of course one must always be careful that the things you want don't always live up to expectations.
Kayaking is also overrated in my opinion - As a teenager I saw myself kayaking in dappled sunlight up and down gently flowing rivers - Huck Finn? However, I got attacked by a swan the only time I tried.
For years I wanted a powerful motorbike - but then I fell off one I'd borrowed from a friend and spent a week in hospital
- I stuck to pushbikes after that and there's lots I still want to do on those - LEJOG, C2C, Alpe d'Huez, Manche to Med, North Sea bike route......
back to the small stuff -
I'd love to climb a tree. I've always been too scared to climb past the first branches as I have no confidence that I could get down again.
Get snowed-in in a pub - tried and failed

When I worked in the centre of Leeds I used to see kingfishers regularly, when I was running along the canal between the station and Bramley Fall. Most recently I saw one in the city centre, a couple of months ago. It popped out from under Victoria Bridge, perched for a minute on the concrete riverbank by the Hilton, then flew off towards the Dark Arches.
If you happen to be in Leeds and you want to see one, walk along the towpath between Newlay and Forge locks. They perch on the branches overhang the canal on the other side, and every so often dart along above the water to the next perch. Its best on a day when the sun is shining on the surface of the water - which I think makes it easier to catch fish. You might need to be patient though - I would see maybe one a month.
Can't help you with the rest - never seen the Northern Lights in Leeds.
