Additionally on the mapping of kerb edges - along busy roads now mapped with the 501.021 colour (the darker paved area symbol), you'd have a thin strip of 501.001 (lighter paved symbol) along the edges of roads, which without the kerb edge mapped would be really difficult to see the distinction.
Having just had a play on my Leeds urban map, I also think it makes road junctions more difficult to interpret.

It also effectively eliminates some roads from showing up on the map (e.g. Merrion St on the bottom right) - again a potential safety issue.

OK, maybe it depends on the width of roads & pavements involved. Those on the Leeds extract look significantly wider than those at Castle Vale. Had kerbs been added to the narrower cul-de-sacs at Castle Vale the 2 thin lines would have filled a considerable proportion of the overall width.

An interesting case is where you know fine well that won't happen, because the map is mainly used for training and informal events. Now it becomes even more important to make the map clear, and things like kerb lines or steps across the end of alleyways are a real no-no.
Generally, I'd put in kerb lines when I'd expect people to run on the pavement* (i.e. yes in Leeds, not in Castle Vale). Sometimes they're useful to emphasise entries to (OOB) areas.
* But not DQ people if they don't.

I find it quite ironic that we're talking about wanting to remove information that can be useful whilst also discussing adding information that is, to me, superfluous in the shape of uncrossable walls ubiquitously surrounding every OOB (as seen on the Castle Vale map) - I find kerb lines, even on quieter roads/cul-de-sacs very useful in determining road shapes and for confirming my location - particularly in areas where things look the same. It also tells me if it's a road (even if quiet) or a pedestrianised area - at a very quick glance.
For me the kerb lines only add clutter where things get very narrow - e.g. narrow ginnels, but that's generally where there aren't kerbs anyway. The only place I've mapped recently where I've had to remove them is back streets in terraced areas.
Most of the time, for me, they blend into the map unless I want to notice them.
I think the black lines surrounding OOBs are far more cluttering to the map as they pull the eye from other detail - the kerb lines don't do that, unless things get very tight and generally that means some simplification is required.

I would *always* try to print the map off - no matter what it's being used for - specifically to make sure it's clear before being released for use.
Even if not possible to do the final version of the map (e.g. one where you've added minor updates), I'd usually have printed a version of the map off to make sure everything looks OK.
I definitely want to make sure it's ok for use before even a local event.
