I’ve always assumed AP is mainly juniors/elites. Are there many vets/masters using it?

If only! Elite is, as it says, elite. It means top of the tree, training at maximal level, racing at peak level. I can't claim to be training maximally or racing at a top level - I train as and when I can or when I feel like it, no real plan - more "running" than "training".
As for racing - i can't even keep up with M14s any more...
So no I'm not elite (sob, sob).

From a planner's perspective, I disagree. There's a difference between "elite" and "non-elite" and when you plan a big championship, you should be doing elite planning for veterans.
What does that mean? Basically, for elite, seconds matter and difficulty doesn't mean understanding the symbols . This is as true for likes of Homer & Big Jon as for 21Es.
In terms of planning, it means that having a trivial path route that's 30sec slower, or a massive catching feature 15sec behind the control, is OK for "elites" because those time losses are significant. Also, to an elite, a maze of twisty paths can be just as challenging as a maze of twisty contours. Contrariwise, controls where you can gain 15sec by seeing someone else punch are even more strongly to be avoided in "elite" planning.
There's other stuff around messing with athlete's heads which you can justifiably do to elites, but would be harsh on the regular orienteer who's just out to have fun. And would stop working if I told you what it was
