Any info on what editing software he uses and its pros and cons be much appreciated. Like the stuff with the map/courses appearing - how does that work?

Excellent! Just watched Lincolshire Challenge Shield 2011 video, which gives a very good view of sport. Hope it's not considered unhelpful to mention that an edit is needed about 11 minutes into film, so correct spelling of Sheild to Shield, because it's a shame to have a small typographical error that could detract from overall excellence
